Leftover Chicken Stir Fry Over Brown Rice

Ingredients

1-2 cup(s) brown rice

1.5 cups of broth

2 parsnips

2 carrots

1 purple potato (because i had it and wanted to color)

1 chicken breast cooked

2 TBS olive oil

2 cloves of garlic minced

2-4 TBS soy sauce (depends on how much you like)

1 tsp honey

2 TBS grated ginger

1/2 tsp ground cayenne pepper (more if you like the spice)


Story

This is a great way to revitalize a two day old chicken breast from a roasted or poached chicken. Also a good way to use random veggies you have kicking around. If your a small 2 person family like us you even end up with new leftovers to take for lunch the next day!

Directions

Start the brown rice

Cut veggies into thin strips

Cut cooked chicken into bite sized pieces

Start sauce prep (wait to heat until you are stir frying vegges)

When rice is 1/2 done heat 2 TBS of olive oil in wok on med heat, add veggies and 1/2 cup broth stir fry for 7 to 10 mins, add cooked chicken and stir fry for another 3 to 5 mins until veggies are cooked to your liking.  Add sauce and heat for 2 to 3 min.

Sauce

  • combine ginger, garlic, 3/4 cup broth, soy sauce, cayenne pepper, and honey in small sauce pan and heat on low for 5 min.
