Russian Cabbage Borscht

Ingredients

1 1/2 cups thinly sliced potato

1 cup thinly sliced beets

4 cups water

1-2 T butter

1 1/2 cups chopped onion

1 scant t caraway seed

1 1/2 t salt (+/- to taste)

1/4 - 1/2 celery root, chopped fine

1 medium carrot, sliced

3-4 cups shredded cabbage

freshly ground pepper

1 t dill

1-2 T cider vinegar

1-2 T brown sugar or honey

1 cup tomato pureee


Story

Adapted from the Moosewood Cookbook. We first ate this soup when visiting a friend on her NH farm on a snowy winter day (before we owned our farm).

Directions

Cook potatoes and beets in water.  Cook over medium heat until tender (20-30 minutes)

Meanwhile, melt butter in kettle/dutch oven.  Add onion, caraway seed and salt.  Cook over medium heat, stirring occasionally, until onions are translucent.  (8-10 minutes)

Add carrots, cabbage and celery root plus 2 cups of cooking water from potatoes & beets.  Cover and cook over medium until vegetables are tender (8-10 minutes)

Add remaining ingredients (including rest of water from potatoes and beets) and cover.  Simmer about 15 more minutes. Taste to correct seasonings. 

Top with sour cream or yogurt.

This was great! I increased amounts some just to use more of what I had. I needed more liquid, so used 3 cups of chicken stock. I also added more carraway and dill. Served with a dollop of Greek Yogurt, which is a good complement to the sweetness of the soup.

This is a great recipe. You can microwave the potatoes and beets in a covered dish with some water to shorten the preparation time. You won't need the full four cups to do this, so just add more water (or vegetable broth) to the pot. Also, substitute a scant teaspoon oil instead of the butter when cooking the onion, and it becomes vegan (but still just as delicious).

I used a leek instead of onion; for seasoning I used turmeric, tarragon and celery seed instead of caraway; and chicken broth instead of water and it is great. Basically just cleaned out my veggies in anticipation of the next share drop this week!

I love that just about all of it was from our CSA. Unique flavor that isn't too bold; great for a cold night. I'd like a little more seasoning, but other than salt, I don't know what might work.
