This is a great recipe. You can microwave the potatoes and beets in a covered dish with some water to shorten the preparation time. You won't need the full four cups to do this, so just add more water (or vegetable broth) to the pot. Also, substitute a scant teaspoon oil instead of the butter when cooking the onion, and it becomes vegan (but still just as delicious).

Is that really 35 (THIRTY FIVE) cloves of garlic?
Or maybe was it supposed to say 3-5 (THREE TO FIVE) cloves?
